Hailing from Newcastle, England, Stuart ‘Stu’ Stalker brings an impressive resume of elite global culinary experience to Healdsburg. Stu began his career as a chef immediately after graduating high school. He spent five years in his native England, rising from Commis Chef to Chef de Partie, before departing for positions in Sydney, Australia, and then Auckland, New Zealand. In 2012, Stu entered the kitchen of world-renowned Noma in Copenhagen, Denmark, where he held several positions throughout his time there, including Chef de Partie, Senior Sous Chef, and Research & Development Chef. At Noma, Stu had the opportunity to cook on the international stage, leading Noma’s pop-ups in Japan, Australia, Mexico, and England at Claridge’s in London. Stu most recently led Noma’s Popl, an upscale burger restaurant, as Head Chef and Culinary Director. Drawn to Healdsburg, Stu joins the talented Little Saint team as the Culinary Director + Executive Chef of The Second Story, bringing years of exceptional experience to the table.
