Little Saint's Bar Team offers a glimpse behind the scenes of our “closed-loop cocktails” that showcase the vibrant flavors of farm-based ingredients through the lens of zero-waste.

Join us for a spirited exploration with our friends from Griffo Distillery as we redefine the boundaries of sustainable mixology with a tour of three cocktails: Non-Alcoholic, Low ABV, and Fully Spirited, using summer melon from Little Saint Farm as the foundational ingredient. Griffo is a Petaluma-based distillery focused on the creation of award-winning, small batch spirits including gin, whiskey, vodka and a cold brew coffee liqueur.

You will learn about creative plant-based garnishes, minimizing and re-using “waste,” cocktail building, flavor and ingredient balance, and bar tool and terminology education, all while sipping through three of our favorite cocktails.
