Matt Seigel, Director of Beverage + Sustainability, offers a glimpse behind the scenes of our “closed-looped cocktails” that showcase the vibrant flavors of healthy, farm-based ingredients through the lens of zero-waste.

Join us for a spirited exploration as we redefine the boundaries of sustainable mixology with a tour of three cocktails: Non-Alcoholic, Low ABV, and Fully Spirited, using grapefruit from Little Saint Farm as the foundational ingredient. You will learn about creative plant-based garnishes, minimizing and re-using “waste,” cocktail building, flavor and ingredient balance, and bar tool and terminology education, all while sipping through three of our favorite signature cocktails.
